ZUBEREITUNGSTIPPS

Fleisch auftauen

Legen Sie das vakuumverpackte Wagyufleisch einen Tag vor der Zubereitung in den Kühlschrank. Eine Stunde vor dem Grillen auf Zimmertemperatur kommen lassen.

Grillen

Heizen Sie Ihre Pfanne oder Grill gut vor. Für eine schöne Krustenbildung empfehlen wir eine Plancha (statt Grillrost). Öl oder Butterschmalz wird nicht benötigt, da beim Anbraten genügend Fett austritt. Grillen Sie Ihr Steak so heiß, aber auch so kurz wie möglich an. Dabei das Steak nach 1-2 Minuten wenden.

Indirekte Hitze

Sobald das Steak den gewünschten Bräunungsgrad erreicht hat, das Steak aus der Pfanne / vom Grill nehmen. Nach 2-3 Min. Ruhephase das Steak in die indirekte Hitze legen. Garen Sie Ihr Steak unter mehrmaligem wenden bis zur gewünschten Kerntemperatur (52-54°C) fertig.

Ruhen

Tipp: Benutzen Sie ein gutes Fleisch-Thermometer, nur so können Sie sicher sein, den perfekten Gargrad zu erreichen. Nach dem Garen das Steak noch 2-3 Minuten ruhen lassen. Anschließend das Steak mit groben Salzflocken verfeinern. Mehr braucht ein gutes Steak nicht!

Grilling Wagyu steak, these pans are best suited

A wrought-iron or cast-iron pan without a ribbed base is best for grilling steak. This model from Skeppshult is made for Wagyu specialties and has received excellent reviews. Thanks to the good heat retention, a crispy Kobe steak is best achieved in iron pans.

The right core temperature for your Wagyu gourmet meat

The correct cooking level for Wagyu steak is medium rare to medium (approx. 54°C). To measure the core temperature accurately, we recommend using a barbecue thermometer. We particularly like the Chef's Probe thermometer, as it has extremely thin probes and a fast response time.

Beef Marbeling Score, everything you need to know about marbling

Marbling for maximum Wagyu enjoyment is not everything. A focus on animal welfare and a marbling score of BMS12 are mutually exclusive. Our melt-in-the-mouth steaks with beautiful marbling (BMS9+) achieve their quality and unique taste thanks to natural pasture rearing. That's why you should always pay attention to transparent origin.

STEAK SALTING, how to do it right

If you buy high-quality Wagyu meat and are looking for a healthy diet, you should make sure you use the right salt. Coarse sea salt is best. Compared to industrial salt, coarse salt from Murray River coarse salt contains more minerals and the pure salt content is lower, which contributes to a mild taste experience.
